If you want to stick with Sennheiser, 800S, or 8XX sticker mod. Otherwise, look into a used Hifiman Susvara with an amp with decent power. If on a budget there are many headphone options, including iems. If you want accuracy, go for the best imaging and layering possible in your budget. You can find plenty of posts and videos about that and decide.

A bit of a loaded question. Usually your best option when it comes to accuracy is a set of studio monitors in a treated room, but for headphones, It depends on your budget, and where/when you plan on listening to them.

While the 280 pro's are still considered a decent budget option for monitoring and listening, I don't think they're anywhere close to accurate. As for a broad recommendation for "accurate" listening while not costing more than a car, the akg k612 pros with a decent amp/dac seem like a good option.

Diffuse field neutral? Harman neutral? Optimium HiFi neutral? Audeze LCD neutral?

Thats a really loaded question in headphone land.

Get something like the Sennheiser HD 560S and use EQ to tune them to your prefered sound. They are easy to drive and should take EQ well enough.

There is Etymotic ER4SR for IEMs. It's known to be one of the most accurate to a diffuse field curve (whether that is "accurate" is another topic).

Otherwise, I guess generally the upper end Sennheiser HD series. 6XX is probably best value for buck overall.
