Spark stores your emails on their servers like many other email apps.

I know and ok with that. Couldn’t find anything visually better and simpler except superhuman (30$\month).

Totally fine that’s your choice. I put that there in case someone didn’t know.

What is the best e-mail client then on iOS?

I've used Edison mail since forever. On IOS it's called Email - Edison Mail. I use it for 5 different emails and love it. Never had any problems.

They're pretty serious about privacy and specifically state that all emails are fetched from your phone and stored on your device directly.

You should read their privacy policy

Did you actually read their privacy policy? They will hold on to your email only temporarily when you use “send later” feature - for obvious reasons.

Never heard of email client using own servers to hold users emails, it doesn’t make sense, server space is not free and they already have access to all your emails.

I can't go into every other website in the world and force them to send me GPG-encrypted emails. The emails are going to arrive unencrypted.

You could use a provider that stores your emails encrypted. But when the app requests the emails using IMAP, they're coming unencrypted, otherwise the email app wouldn't be able to read it and show it to you.

If the email app gets them unencrypted... it was all for nothing. So how does it solve the problem mentioned?
