If it was unlocked, the theif probably went through their saved passwords, although that also requires biometric/password to get in. Perhaps it's an older touchid model that doesn't ask for verification for autofill on every use, so the theif just went to appleid.apple.com and changed the info

it’s too suspicious to be that coincidental. How long did the thieves plan this out to do all the things exactly the way it’s supposed to be.
