You can’t go back to iOS 15, it isn’t being signed anymore.

Right. There isn’t much time, but I thought someone said 15.7 RC was still available for now.

Yes, actually it is 15.6 RC (19G69) that is still being signed for installation. I've downgraded two phones without any issues. It is a fairly simple process if you don't mind going factory fresh, i.e. no backup restoration (some iCloud data can still be restored regardless)
