Nandoos, Honest those two i know are full vegetarian.
On top of what others have suggested, Marty's on Central ave makes the best impossible burger I've ever had. Plenty of places have vegetarian friendly options. For Chinese food, King Sczechuan in the Heights and Precious in Hoboken have great vegetarian options. Satay in Hoboken (Malaysian food) will make any dish vegetarian style. For Indian food, there are plenty of great options but we like Rasoi the most. If you like Italian/American sandwiches and pizza, Tony Baloney's has many veggie/vegan options too. Also, there is a Mamoun's in Hoboken and it delivers to the heights.

Rositas Yah has veg burritos, tacos etc. Vibez juice cafe is all vegan. The smoothies and the food is good. I’ve had the beef patties and vegan ribs.
I also highly recommend Dosa House
The Cliff at 38 Congress Street in the heights is a Vegetarian coffee shop

The Brick in Hoboken has a full Italian vegan/vegetarian menu
Oddly enough, Würstbar has a ton of veggie options. All of their meat sausages can be substituted for a veggie sausage. Add french fries, etc. and it’s all vegetarian.

Vegan AF on central in the Heights for fast food. Happy Vegan in Hoboken has good pastries. The Pet Shop is a bar downtown with good vegan bar food choices. Subia’s has more traditional vegan food and some comfort food options too like donuts. Plant Base which is on the other side of town has great tacos. A lot of the restaurants in JC have vegan options. I like Charritos vegan options in Hoboken. Those are the places off the top of my head that I’ve tried.
