I discovered that you don't want to have this conversation with a bunch of servers at the job you work at. Apparently they will defend to the death their getting paid no wage and relying on tips to survive instead of it being an extra.

Here in Italy tips are not mandatory and servers don't get that much salary except in very high-rank restaurants. So actually we see that as a big advantage of working as waiter in many foreign countries. Meaning it could be worse if you really don't have that but still you are underpaid... Anyway the low salary for those categories is an issue from whatever perspective you look at it

Tipping started in medieval Europe as a power play between servants and nobility. It was then used in the U.S to keep formerly enslaved black people esrning less than white workers through a reduced mininum wage and an increased reliance on "tips"
