There are white sweet potatoes and orange sweet potatoes (which sometimes get called "yams" which is technically incorrect but commonly done now). There are also purple sweet potatoes! And there are a few varieties within each color.
They each have a slightly different taste and texture. Did you notice a difference?

Oh yes, I'm aware! I was a cook for a family who tended to favor Korean sweet potatoes with white flesh and purple skin. Sweet potatoes are awesome. I just thought this was interesting because I buy in bulk 3 lb bags and have never gotten a white one in the bag before, in years.
They're going in the oven now. We'll see how they compare when they come out!
