Typically adding butter to a hot pan is preferred to avoid the milk fats burning and adding a bitter flavor to foods. However, a grilled sandwich likely won’t be in the pan long enough to make much of a difference. Butter has a lower smoke point that other oils so will tend to brown faster too.
