By this I mean, either the world, or the crazy car chase scenes, or anything that kind of reminds you of Mad Max in general.

Before anyone says “The road” (I know not a horror movie), I already have seen that and I love it. But it is a dusty and dry world and kind of a good example of just how far from mad max I’m thinking of.

Nah you can prob watch the trailer, it's not a huge blockbuster but was definitely entertaining and is exactly what you're looking for...The Road/Last of Us vibes but the danger is Vampires

Also check out Carriers with Chris Pine, it's free on YouTube. Post apocalyptic about a deadly virus.

It's mad max, but even more violent and a kid as the lead it's a great movie! Highly recommend

This is not really horror, but I was recently thinking of Reign of Fire. It kind of might fit because it’s so hot and desolate the whole film. You have a ton of better suggestions, The Bad Batch specifically lines up well, even though it isn’t really a great film.

You might also like The Hills Have Eyes (2006, though OG one is good too) which is set in the desert.

It's not really a horror movie (unless you find nihilism terrifying) but The Rover is almost like it's set at the same time as the first Mad Max movie.

The Road, no haha. My first tought was Turbo Kid, but seems you already have seen that. So I give another vote for The Bad Batch and maybe Dredd (2012). Dredd does not play in a post-apocalyptic desert, but it's dystopian and also stands out trough it's unique action scenes.

I wouldn't exactly call it good but Hardware is set in a mad max sort of world with a little cyberpunk blood in it. The third act is kinda dogshit but its got a fun aesthetic to it. The guy who played porkins in star wars is in it as a harvey weinstein kinda character that gets a pretty entertaining death.
