Hollywood prefers him in villain roles I guess? It's worth seeing him in some of his non-Hollywood roles, off the top of my head here's some where he's not playing the villain:

The Hunt
Another Round
A Royal Affair

The actual answer, I think, is that Hollywood tends to cast Eastern European characters in villainous roles. Daniel Bruhl and Christoph Waltz are mostly cast as villains as well. Even when they're not, they tend to play off those tropes (like Bruhl in Rush isn't villainous but is seen that way by others, or Waltz in Django as a direct subversion of the evil German trope).

If you watch Mikkelsen's Danish films, he gets much more complex roles.

First film I saw him in was a western blockbuster ‘King Arthur’ with a very underrated cast btw (look it up honestly) - he played Tristan, who was a good guy.

Typecasting is a big problem in general but especially if they're not native English speaking actors. Just look at someone like Michelle Yeoh or Hiroyuki Sanada or even Antonio Banderas. The roles Banderas gets in Spain are much more interesting and complex than most of his Hollywood output and he's one of the more fortunate ones. Michelle Yeoh has been working in Hollywood for literal decades and she's almost never had a role that asks her to be more than cool martial artist lady. Ditto Hiroyuki Sanada.
