I'm looking for a butcher that would possibly be willing to sell beef tallow by the pound. It doesn't have to be already rendered. It could be chunks of beef fat with meat still on them. really just looking for fatty trimmings to render down myself to make refined Tallow.

So is their name a political thing or the non political definition to "use something liberally" I'm assuming the ladder. I don't like political companies left or right.

I know you’re looking to support a local butcher, but did just want to throw it out there that the Monadnock Co-Op usually sells beef tallow!

Check with Archway Farms in Keene, he does pork but sells local beef. There is also a small beef producer at the corner of West St. and Bradford Rd. with a small stand. Jenna's Market on West St. does small scale butchering

I'm looking at butchers because I want to support local business. I'll still check out the grocery store though. Maybe they sell local stuff like they do with milk.

Most big-box grocery stores have some kind of butchery in them. While a chain might not be local, the employees are. I consider Market Basket local though.
