I will be living in NH and the business operates in NY without me. I technically "oversee" the management, but there's not much that I don't do remotely.

Yeah, you need a really, really, really good attorney. It's probably less expensive to just pay your taxes but, you do you.
However, when you've spent a lot of money on fees and get the following answer, please remember you were told this for free (twice):
Tax is owed in the state the business was conducted in, not where you "oversee" it from.

I would assume that the business' EIN number is from NY. Which would make it a NY entity and pays NY taxes. Even if a business was headquartered in another state, but has a business in another state, it would still pay taxes.
I believe this also includes electronic businesses.
