Who do you demonstrate that to? I’ve registered a car without demonstrating crap and without first having insurance). Of course you are super fucked if you don’t have the money to cover yourself in the case of an incident.

You are quoting nh.com whatever that is. No one requires proof of jack up o register your car in NH and no one comes knocking on your door to demonstrate it. There is no requirement of insurance(self or otherwise). That’s it.
There are two other states like this but with additional rules. Texas for example requires you to have a $50k bond. Can’t remember the other one but it’s got rules as well.
