If it's what I'm thinking of, it's not exactly a walkable Chinatown. There's a high concentration Chinese/Taiwanese grocery stores and restaurants on the southern end of Edison between rt 27 and rt 1 including a few dim sum and dessert shops in Festival Plaza (where Hmart, which is not Chinese, is), Kam Man Foods, 99 Ranch on rt 1 south, and a bunch of lovely restaurants on Old Post Road including Prince Tea House and Golden Seafood Restaurant. There may be a dozen boba tea shops in the vicinity as well.

Until today I'd thought of it as a pan-Asian-town since there are Malaysian, Vietnamese, and Korean businesses intermixed with them, but I can see why someone would think of it as a Chinatown.

I was going to say the section of route 1 and 27 right before getting into New Brunswick.
