I’m heading to Asbury Park in the summer and hear they have an outdoor concert venue. If I stay in a hotel, will I hear the noise late into the night? Which hotels may be directly facing the venue? We have a little child I don’t want to have to have to put to bed repeatedly. We did want to stay in Asbury Park itself.

Appreciate it. Berkeley makes sense from what I understand.

People are failing to mention that the Empress has a club underneath it that has a pool and is loud as hell into the night.
Don't stay there unless you plan to party late night. It also typically caters to a specific clientele.
The Asbury Hotel and the Ocean Club are the nicest by far.
Check the Pony Schedule. Not all shows are summerstage, usually only the big acts.
St. Laurent is the old Tides Hotel.

What is the specific clientele you speak of?

Asbury park is a very gay friendly town. Club paradise is a very well know gay club.

So here's the deal. As u/N0_ThisIsPATRICK mentioned, there's four proper hotels (I'm trying to find the fifth, but I can't think about it or can't find it) in Asbury. The Empress, The Asbury, The Asbury Ocean club, and The St. Laurent.
The Ocean Club and The Empress are gonna be the closest hotels to the Pony. The Empress is the closet and you can watch and hear the show depending on your room is. For reference, here's a street view of The Empress looking toward the pony. You can see the Ocean club in the distance, but you won't really be able to hear the concert that well from it and it's pretty expensive. The Empress is strictly 21+ due to the fact that it's a very gay friendly hotel.
I know that during the summer the roof bar is opened during the summer and they have a DJ that runs till 1 at The Asbury, so it might not be a good idea if you're bringing your kiddo. Not too sure about the St. Laurent since it's still new, but it might be better since it's in the middle of a residential neighborhood. Might be a little pricey during the summer though.

The Berkeley is the fifth one you're missing. :) I forget about it too sometimes.
I should have mentioned the rooftop bar at The Asbury Hotel. That could be noisy, but prob not as noisy as the Summer Stage.

I've heard some stories where people have gone in to go to bed and they were pretty much up until the stopped. It's the only the upper floors that have that problem.

Technically the Summer Stage can only play as late as 10:30 pm but any shows I’ve been to or happened upon while at the boardwalk have ended by 10 pm.

Thank you for the breakdown and what to expect from those places.

There are basically 5 hotels in Asbury Park proper.
The Empress Hotel and Asbury Ocean club are practically next to the Stone Pony so they are probably not a good bet for you, on top of the Ocean Club being very pricey.
For reference, I can sometimes faintly hear the Stone Pony Summer Stage from my home 12 blocks away.
All of the hotels are closer than that, but you'll probably be better off at the Berkeley or The Asbury Hotel, or even the St. Laurent (a smaller boutique hotel). If you're staying at the Asbury or the Berkeley, you might be able to request a room that faces North which would also help a lot.
Edited to add: There are several small hotels or Bed and Breakfasts in Ocean Grove which would still be walkable to pretty much any destination in Asbury Park, but I'm not sure how they are with kids.
