You might try the Stanhope House. Not technically in Morris, but probably only a mile or two from the county line.

Lamplighter in Chester sometimes has live local bands - The Pavilion Lounge in Budd Lake does but good luck finding out when - the bars in morristown have live music every so often - Thatcher McGhees in Denville
