Aren’t disco fries just fries with cheese and gravy? Used to be my go to along with a THE&C after the bars closed.

First thing to check is if they have real fries or fries with the crunchy layer on top of them, coated fries. They can’t be coated fries, they must be good, unadulterated fries.
Coated fries are made to be able to sit under hot lights for longer without getting limp and soggy. They are also used for to-go orders since they don’t get as soggy in a to-go container. To use them for dine-in customers is just lazy. I want good, fresh fries that weren’t dipped in anything.

First step go get a couple of beers in you. 2nd step find a 24/7 diner.. all it is mozzarella cheese and brown gravy.. sometimes you might have to ask for extra well done fries to get them crispy.

If you know a good diner odds are they will have good disco fries. Do not get them anywhere but a diner. Pizza joints and similar try but it’s not even close.
