As an Italian living in the US, I can vouch the best pizza sauce is simply tomato sauce without any addition, no onion, garlic, parsley... (we call it "Passata di pomodoro"). It's hard to find, even in NYC, but it is the best way to keep a fresh taste and let emerge better the taste of the other ingredients.
