Two possibilities.

  1. You need one prayer per cursed individual, so Emma could say it for OP because there was only one cursed person, only one prayer.
  2. Saying the prayer wrong, is itself a death sentence. Remember, despite the fact that OP survived several nights without the prayer, Old Tom was quite clear that making One mistake meant death.

Those are my best guesses in any case.
