Gotta know a guy.

This seems flip, but server and bartender jobs mostly you’ll get to keep your cash tips with varying degrees of how much you need to claim on taxes and the hourly paid out regular in a check. (Sometimes declaring cash tips by the book, sometimes it’s calculated as percentage of sales.)

For everything else, you have to know a guy, ask around, gig on Craigslist.

Handy Man assistant. Just walk onto job sites and ask to talk to the boss. What skills tools vehicle you have will determine pay, but everybody is looking for solid help. Cash off the books is pretty common

Each three week long crew works to clean areas identified by the City of Providence and are cash paid daily for their work. During their time on the A Hand Up crew, they also work with Amos House social workers to address the issues that led to panhandling.

Dunno. It's looking like being former Housing Secretary is pretty sweet. Guy gets fired for not hitting any of his performance metrics in his first year, then gets hired right back as a consultant at a pay rate one-third higher than before, and is probably there indefinitely, no term limits ☹️
