He struggles with work anyway as he has chronic fatigue, works 5am-5pm, is prone to depression, and travels for 2 hours there and back. This week he is doing overtime (only Thursday left, not Friday) and leaves at 5am but doesn't get home until 9pm. His body aches so he gets in, eats, showers and then we lay in bed watching whatever he wants. Thankfully he is definitely relaxed doing so. I massaged him last night but I want to do more for him. Even if it is just on the weekend I would like to spoil him a little.
I've offered to uber eats him lunch at work so he can nap on his breaks and not go out to buy it. I make sure I am there to cuddle him to sleep. I tidy his room so he has a nice environment to come back to. He's happy and his mental health this week has been better than we anticipated. He doesn't need me to do anything but I would like to show my appreciation and love for him, if anything. We are going out this weekend shopping and for a meal, as we didn't last week for our 6 months. I can treat him to any clothes he likes or pay for our meal.
TLDR how would you like to be treated after a tough week at work? Are there big or small gestures that make you feel loved or appreciated?

I don't know, sounds like you're doing a phenomenal job at it. If what you're doing goes unappreciated, he is expecting too much.
His is work schedule a permanent thing, or is this a one off situation. That can be concerning for mental health long term.
