A heart that is meant to love you will never take pleasure out of hurting you. And a person that loves you will never have too much pride to appologise.

What was the "joke"? Either way, I'd also explain to her that a joke is only a joke if both parties find it funny. If she thinks those jokes are funny, maybe she needs to reconsider how harmful her idea of humor is.

I think therapy is great because in large part it does teach you to communicate and perhaps not rug sweep valid thoughts and emotions.

However, part of evolving in therapy also means growing as person and gaining tools to resolve your conflicts internally. For example, if you suffer from low esteem, then therapy is not so your girlfriend can work around your esteem better, it is for you to learn how to let go of low self esteem.

Im not saying get over it or anything like that, but you go to therapy for you, not for your girlfriend.

I agree and I was (trying to at least) applying communication skills and not sweeping sweeping things under the rug in this situation

If you tell someone they hurt you and their response is any form of “I don’t really care” when why are you even together?

She doesn't CARE about how the joke made you feel, she care that you are upset, she doesn't care that the joke hurt you, she doesn't care that you want an apology! When people say things that hurt other people and use the excuse that it was a joke and they don't sincerely apologize it wasn't a joke! I personally with the way she's acting and her attitude, I would tell her that this relationship is a joke and I would break things off with her and leave and I would also tell her that the jokes on her.
