Are they actively photoshopping out the hexagonal lens flares? I feel like they have gotten less pronounced lately.

It’s the mid-infrared instrument (MIRI), and stars are much less bright in those wavelengths

this isn't always true. different instruments take photos at different wavelengths. only some photos need to be recolored to reflect reality. notice i said reality? the colors aren't "made up", it's how the object would appear to your human eye. they change the color because they take photos in different wavelengths, like infrared. it's like taking a photo of yourself in infrared then changing the colors to what you look like to the human eye
