As someone coming from New Mexico and the border, I am picky about Mexican food. We went to a place in the area last summer and it was not what I was expecting. In New Mexico, we have red chile and green chile. That being said, Mexican food is very regional. It's extremely different in New Mexico versus Arizona.

Tacos El Gordo is what you'll be looking for here then

I just looked at their website - it looks good! Have you ever heard of Hatch Chile?

I lived in Albuquerque for a while, you’re not going to find a ton of green chili here at all. It’s a real shame. Tortilleria Perches is also worth checking out.

Yeah I figured that would be the case since you are from New Mexico. The place I mentioned is very popular in Springfield and locals rave about it but it’s very weird if you’ve had actual Mexican food

Mexican Villa’s origin story is literally that a guy from the Midwest tried Mexican food, liked it, and decided to DIY it over a decade later, then made a whole restaurant based on the “exotic” flavors where everything that can come from a can does, and the microwaves do most of the cooking. It ranks in authenticity about the same as Taco Bell.
