I love cashew chicken. When I want to get it on the go, I usually get some from Hong Kong Inn or the Alamo Drafthouse. I got a recipe online years ago which is my favorite, but I'm always up for new places to try it.
Canton Inn has my vote.
I like Shanghai Inn the best.
Here is the cashew chicken recipe we do at home:
4 chicken bouillon cubes, 2 cup water, 4 tsp sugar, 2 tbs soy sauce, 2 tbs corn starch with 1/4 cup water

Try it. I’ve been going there for 20+ years. My brother likes Hong Kong and when he comes to town we go there. It’s good, but I think the chicken is crispier and the sauce is more flavorful at Shanghai. It is a little more expensive though.
Is it just me or has Bao Bao been not as good as of late? Like its still good but not quiet the same.

I haven't tried their cashew but the kungpow is also great.
Last time I went I got sweet and sour chicken and the portion was significantly smaller, but the quality seemed the same.
That's unfortunate, maybe a new chef is in training? Hopefully it works out because I love eating there and don't know of anywhere else I can get something similar to the lionhead meatballs.
I don’t go to Bao Bao for Springfield style Chinese food.

My dad has been going there since the 70s when they were across the street. Ive been eating it all my life and I think its the best place in town. Canton Inn is a close second

So start with a good strong chicken stock, add soy sauce, sugar, oyster sauce, and white pepper. Thicken with a corn starch slurry and just keep seasoning it until you get it just the way you want it. Measurements are lame.

Btw, Korean Garden in Willard is one of my fav. Used to be hongkong until I tried Korean Garden. Chinese Chef off Campbell just south of battlefield is also a good option.

Canton Inn is also good, but they season their chicken a lot, so it's not quite the normal Cashew Chicken. I ask for extra sauce when I go there because they're a bit stingy with it.
