I’m making a special dinner for my friends group and I would love to include rabbit. I’ve called all the butchers I could easily find (Horrmann, Worden, Schuchmann, Harter House, City Butcher, Legacy Meat co, Ozark Mountain Meats, B’s Meats) and nobody has it. Does anyone know a local farmer or butcher that I missed that sells it?

On the way to the yard waste center out by the power plant there is a house by the James River Bridge that used to have a sign saying they sold meat rabbits. Not sure if they do anymore.

This is the same thing I thought of. You just don’t forget a hand-scrawled sign that just says “meat rabbits.”

You might look on a marketplace for people who are selling rabbits and ask if they have meat available.

You might check Hormann on Battlefield. They always have a variety of non-traditional meats.

I think I recently saw some at the farmers market and at Harter House as well. Express Foods can probably get exactly what you need as well.

Edit: Missed the Hormann/ Harter House note. Check Express Foods for sure. Chris has a great portfolio.

You might try Hyvee. From what I remember they have a variety of meats.

We got some farm raised from the Willard farmers market during the summer. They have a facebook group. You might find it and reach out there.

Try Schumann Meat Company! Last time I went to pick up a goose, they had all kinds of meat and I think I remember seeing rabbit. They are really nice and can order meats if they don't have them in stock.

Wild jackrabbits around here aren’t very good eating, imo. You basically have to stew them, as they are tough and gamey. Be much better off to find some rabbit that was bred for meat.

We definitely do. But the same is true of the eastern cotton tail. Our wild rabbits just aren’t delicious here like they are in other places. Meat rabbits are better to eat.

Google it. We have them here. I live right on the edge of the city, near farm land. That’s what they like. I see cotton tails and jackrabbits. 🤷🏻‍♂️

Some of the stores like Harter House and HyVee have (or had in the past) rabbit in the freezer section. The meat counter or cust service desk might not know about this

There are two good sized farmers’ markets in the area. This is where you can find rabbit if it exists in Springfield.

I believe mama jeans on sunshine may carry frozen but don’t quote me on that.

Other than that, here, start calling other farms. Having used to work on a pasture-based livestock farm, we were very in touch with what was available.

Earlier this year, I called all over Springfield looking for rabbit. Hormann Meats eventually got some in—expensive though. HyVee (on Battlefield I think?) said they could get it, but they’d have to wait on their supplier.

Swap meets have a lot of chickens and rabbits. Might be done until Spring though. Would have to butcher it yourself of course
