Well the dodo went extinct because it was so tasty. I feel like that is a really good reason to bring it back.

Exactly. Apparently it was the rats on board Dutch ships who feasted on Dodo eggs which lead to their extinction.

It was more likely the introduction of pigs and macaques than rats.
