Yes, companies cannot pay to be let through Ublock origin so it has far better protection.

Yes, that is kinda 100% required for an addon that looks for ads to block to function. All adblockers will be looking at all your traffic and matching them up against lists and heuristics to look for traffic to drop/rewrite as needed to remove ads.
The better question is if it sends any of that traffic information off your PC.

A corollary of this is being fought in courts right now about automated license plate readers. Short version is using them is fine to look for wanted/stolen vehicles, but the fight is to get the rest of the "incidentally collected" data erased and not accessed so you're not violating the rights of innocent folks

those licenceplate readers also do face scans( in the Netherlands, atleast ), they dont like telling people that tho, and almost nobody knows.
