Depends on the show. If it's a show with an ongoing storyline, like Power Rangers, I watch all of the episodes in order.
But if it's a sitcom, drama or animated series, I'll watch random episodes and just pick whatever episode that sounds the most interesting. Those shows are easy to watch out of order because almost every episode kind of tells its own story.
But if it has an ongoing storyline and a lot of the episodes aren't standalones, watching in order helps keep me invested and keeps the suspension going, especially if there's a lot of story or character arcs. I like when it's a great show and not a mediocre one where watching in order feels like a chore.
Also if a show has thousands of episodes or close to it, like the Pokémon anime, for example, there's no point in watching all of those episodes for the sake of it. Shows with that many episodes tend to have so much filler and the same old, same old, so there's no point in being invested, just picking which episode out of a thousand that fits your mood.
Watching in order only works for serialized shows, but any other shows, picking apart which episodes out of the bunch is the way to go.

If I am watching a show intentionally, I watch it in order.
But most of my life I was subject to the whims of scheduling, so missing a few episodes and only getting to watch them years later was the norm.
Definitely don't see any reason I'd intentionally watch shows out of order. But if I happen to walk in on a show halfway through and it looks awesome it still sometimes happens.
