I've made these quite a few times (I am Australian). They're great! The white filling is not cream but a mix of butter, sugar, gelatine and milk. You put a layer of jam on the base, top it with the mock cream and put on the two tone icing. It can either be white and brown or pink and brown.

usefully_useless t1_j284fj6 wrote

On a scale of plain buttercream to panna cotta, how gelatinous is the filling?

21

Zealousideal_Ad642 t1_j28653q wrote

It's nothing like Panna Cotta. It's more like a swiss meringue buttercream which has developed a slight crust or a very, very stiff American buttercream. Sometimes it can be slightly crumbly, I guess this may depend on age.

Neenish tend to be your local suburban bakery staple and best before dates are probably not a thing in some of those🙂

Eve’s Pantry in Auckland does a great version. Virtually every bakery in Mt Albert and Mt Roskill has these…huge variation in quality. Crisp tart shell, light fluffy lemon crème filling (not lemon curd) and a delightfull chocolate and vanilla icing top is what you are looking for. Yummy.

I'm from NZ and we used to make these at a cafe I worked at in Taupo, they were popular - but old fashioned.

I_Heart_Papillons t1_j28mpyx wrote

Yeah looks like something a nanna would make/like.

Definitely not popular in Melbourne. Never see them.

1

The-Wishkah t1_j284l5c wrote

They are at literally every bakery.

They are the ones your mum never let you have. Usually quite expensive comparatively too. And small.

The pic on wiki is wrong though. They have 1/2 choc icing and 1/2 plain white. And lemon flavoured

11

ProjectOk6377 t1_j28i4bg wrote

They are half chocolate icing, half pink icing. And sugar flavoured. I've never heard of the ones you've described. Kiwi?

Never been in a Couplands, they're not really widespread in the North Island. And while I've been in plenty of supermarkets and had stuff from their bakeries, I have never seen this.

Just for some confirmation since some others here haven’t heard of them, I used to buy them every day after school from my local (Sydney) bakery. Early 2000s. Not the pink and brown ones, though - they made a passionfruit flavour, and it was amazing.

Waffles_ahoy t1_j287v4h wrote

I didn’t know they came in pink! The standard white ones are pretty tasty though if you get a good one- some are way too sweet. The filling is meant to be made using condensed milk and should be thick, not super sweet fluffy garbage

3

stefanica t1_j2a6lud wrote

I have no doubt you are correct, as I've never had one before. But condensed milk is one of the sweetest things ever!

1

Waffles_ahoy t1_j2afwjz wrote

You’re not wrong, but ones without condensed milk in the filling are even sweeter again
