Methanol is primarily produced from fermenting grain, not sugar or fruit. Although a small amount of methanol will still be produced, the antidote happens to be ethanol, which will be present in much higher concentrations than methanol. So not much danger of blindness if any.

Many prisons ban or heavily restrict fruits and juices because of people making pruno on the sly, so inmates would make it using bread and potatoes.

The juice typically has sulphites added to kill yeast. This is why if you are going to make hard cider, you have to look around to find cider without sulphites at actual orchards. You won't find it at a grocer.
