The Clarendon Gorge in Shrewsbury on the AT is a can't miss. Even if you don't hike there, the suspended bridge is right off - and I mean right off - Route 103, about 10 minutes from Rutland. If you want to stay at a super cool hiker hotel, I recommend the Inn at Long Trail (best Guinness in VT). Deer's Leap is right there and you can get a great view with a short hike.
