Cornerstone in Barre has really good fish and chips. I haven't tried the dish at many places in VT, but I was super happy with theirs.

if you're in town, visit Aranda's for some good empanadas too. I went recently based on a reddit recommendation, and they're _good_.

the second best fish and chips in town is mulligan's. they're also pretty good - it's funny, because just the other day I was thinking how lucky I was to have 2 good fish-and-chips spots nearby.

the fries at cornerstone were just okay. great fries at mulligans. I'd substitute to some other side at cornerstone. good bar, too. (lighting, staff, table/chair ratio, etc.)

Seconding Cornerstone. Also Tozier's in Bethel - great variety of fish dishes there too.
