When the world needed them most, they vanished. I can’t tell you how many nights my friends and I spent at the pasta wonderland known as Vapiano, and there’s little I wouldn’t do to bring it back. Has anybody found a similar restaurant that can pull off the magic? Such a simple, yet genius concept: cafeteria-style, design-your-own pasta place. I would give my left leg to have it again.

Cucina Al Volo in Union Market is the only thing that comes to mind. Your choice of pasta type and various sauce options. Looks like mixed reviews but every time I’ve ordered from there it has been great.

They also have a spot in mt vernon triangle called toscana market. They make the pasta in house and I've enjoyed everything I've had there. Source: Am sitting inside toscana currently eating a bowl of gnocchi and vodka sauce

I just moved to Vienna (the Austrian one!) and there are, like, six of them within a mile radius of me. My wife and I have commented MANY times on how it feels like that moment in time when they were all over the DMV.

May you find a worthy replacement back home!

I think they are a German company. Saw a bunch of them in Berlin, Dresden and Munich.

I know, I’m sorry — I added the Austria as a second thought because I didn’t want to get your hopes up. And, of course, the real sting here is that there is amazing Italian food on every corner and there’s no NEED to go to Vapiano. I wish I could send one back your way!

I miss Vapiano. Always got the Crema di funghi pasta with tagliatelle and it was great. Loved the fresh pasta and have not seen another restaurant that is similar. The Gallery place restaurant was huge.

Toscana Market is amazing on K st. You can build your own pasta. Everything else on the menu is great as well! They have take home pasta deals too

They had a salmon carbonara that was so so so good for those of us who don't eat pork. I miss it! It was the perfect place for a work lunch or a group meetup, too, with the individual cards system.

I had one across the Airbnb I had in Vienna (Austria) and checked it out for dinner for old times sake and it wasn’t as good as I remembered it.

Eataly isn't quite the same thing as Vapiano but it's fairly close. Unfortunately I don't think there are any in DC.

The concept of individual charging cards and different stalls of food was originally created by Movenpick Marche. (Marche has mainly Swiss food.) Unfortunately there are none in the US. Locations are in Europe and Singapore.

Domino's pizza has pasta that can be customized... It used to also be cheap without all the hidden delivery fees. Best to order and pick up at the individual locations... It still costs less than pasta anywhere else if you're in a pinch.

I ate at the Vapiano in Frankfurt last Spring. Only place I've ever been to their restaurants.
