Thanks for all of the recommendations! The last time we were in MO and I asked about their red chile, the waitress said I was confusing her. lol.

Anyhow! We will check out some of the places.

As someone coming from New Mexico and the border, I am picky about Mexican food. We went to a place in the area last summer and it was not what I was expecting. In New Mexico, we have red chile and green chile. That being said, Mexican food is very regional. It's extremely different in New Mexico versus Arizona.
