I really enjoyed The Astronomy Book: Big Ideas Simply Explained (https://www.amazon.com/Astronomy-Book-Ideas-Simply-Explained-ebook/dp/B073W2BCHD/). It goes through the history of astronomy and space with all the major discoveries that happened along the way. If I recall correctly, it goes through all those topics. I especially the explanation of spectrography and all the discoveries its led to!
