Even though this trope has been abused in RPG's from hell to back, I do still enjoy stories of heroes going through difficult times then persevering and managing to come out on top or make things work at the end.
Edit: that or games like Harvest Moon and Story of Seasons

Definitely a replacement
Will prolly only play the Original out of Nostalgia but that's pretty much it.

Was kinda surprised that they remade 4 instead of CV but then again, 4 was Popular because it was the very first game to have the over the shoulder view that would later define future TPS while CV was originally a Dreamcast Exclusive and I think not a lot of people knew about the game because of that?

It's more like people don't like grinding cause they would rather blitz through the story.
While there are definitely some JRPG's that require you to grind, it doesn't even take that long since 3-5+ levels is more than enough to take on the next boss(10+ is kinda overkill but hey you do you).
