I fried some garlic, shallot and chilli in a little olive oil with salt and pepper then nixed that with plain cream cheese, a squish of lemon and half a tsp of seeded mustard. Mixed it, mushed it and put it into a ziplock bag. Snipped the corner off the bag, pocketed the chicken and squeezed the mix inside. Crumbed it, fried it topped it. It was absolutely delicious!
Edited - also added to the cheese mix was parsley, basil and chives, chopped finely.
