Post-launch support.
Many games get patches months, if not years after their release.
Back then bugs were just something you had to deal with on your own.
Unfortunately some developers abuse this by releasing half-baked games full of bugs.

Armor doesn't really matter and there's like a dozen shields that would work for this strategy.
It's a RPG game, you're supposed to adjust your build for the challenges you're facing. There's a respec mechanic and by the time you reach her you can have at least 6 fully upgraded weapons if you need variety of tools. If you've played for long enough to reach her you should be able to understand game's mechanics and use them to your benefit.

Tell me you haven't tried it without telling me. Everyone is parroting this but it's not true at all. You're able to outdamage her healing by huge margin even if you literally hold shield down 100% of the time. You don't have to roll even once in that encounter

The only purpose of her healing mechanic is to punish estus chuggers who don't even try learning her moveset and just tank the damage.

I can't really think of any build she would invalidate, at least not more than any other boss. INT/caster builds can destroy her with Night Comet, Faith builds with Lightning Spear and the Frost Breath, Arcane with Bleed, especially Rivers of Blood.
And then there are "cheese strats" like Frost Bombs, Sword of Milos, poking from behind a greatshield, poise-breaking WA like Flames of the Redmane, parrying

Yeah, it's about mindset more than anything. It's really difficult to beat if you perceive dying as loosing and if you get upset/frustrated about it.

You only lose the currency you had on you while you died, and you can reclaim it. Levels or equipment aren't lost

Absolutely, there are many features that help you in single player such as summons, plus most enemies, including bosses are very weak to one or two specific things that basically trivialize said enemies. For example some enemy can be very annoying and difficult to fight, but if you use any kind of Fire damage they'll get stunned for long enough for you to kill them. Some enemies take huge amount of damage from holy attacks, some are difficult with melee but trivial with ranged attacks. You get the idea, it's very RPGish.
Overall the game isn't difficult because it requires huge amount of skill or anything, it's difficult because many people get angry if they die and start making stupid mistakes, learning nothing in process. If you have the right mindset you'll realize the game is very beatable.

That's the thing, you shouldn't "want" to win. Winning is something that just happens when you do enough things right and when don't do too many mistakes while at it.
Improve by solving small indivisible problems.

Start small. League is extremely complex game, instead trying to succeed in every aspect of the game break it down into small problems that you'll conquer one by one.
Pick one champion and stick to it. Practice that champion's moves. Slowly add complexity, but always focus just on 1 specific thing.
Don't set goals like "I need to win the lane", set goals like "I should last-hit most of the minions" or "I should keep ward in this brush at all times".
Way too many people get distracted by meaningless things like winning games and get upset over not achieving their goal, often nullifying anything they could have learned.

I'm a huge fan of Elden Ring lore and story, mostly because it's very entertaining searching for the lore bits and assembling them together. I wish more games were like taht. Souls trilogy was very similar but the lore was more fragmented

I'd add to this - digital distribution is basically reason why have indie games taken off so much
