For what it's worth, there's a new Sbarro at the newly opened truck stop in Norwood, about 50 miles east of Springfield. I don't believe it's been added to the website yet.

I agree that Coffee Ethic definitely deserves a spot on the list, but I adore Classic Rock too. Two of my fave shops in town.

As someone who regularly enjoys the trails in Springfield and the surrounding towns, having them connect like this into a big "super trail" sounds like a dream. Love it.

Mudhouse is open till 9 on Fridays and Saturdays, and Green House is open till 9 every day of the week, I believe. Not super late. The pandemic really did a number on coffee shop operating hours.
The latest coffee shop in town to my knowledge is Classic Rock Coffee on Sunset and Kansas Expressway, which is open till midnight on Friday and Saturday nights.
