May or may not be what you seek, but The Impossible Dream (the Quest), composed by Mitch Leigh, written by Joe Darion is the first to pop in my head. Quite a few singers, since it's a broadway tune.

Try "Dit-elle" by Jorane. https://www.youtube.com/watch?v=yRCQBPf4oCM
(Not my all-time favourite, I don't really have one. It's just one I like to have people discover, even though it's not exactly new anymore.)

Reply to I wanna listen to some new music by OddCow1
A favourite album? What's that? My "best" changes from day to day, sometimes even hour to hour, depending on my mood. (Currently listening to "Meeting with a Friend", by Ara Malikian, bought for the Concerto Grosso for String Orchestra by Palladio.)
I love a lot of "classical" music (the over-encompassing genre, not only the strictly defined "classical era"), but my tastes really go everywhere. "Riding a Black Unicorn" by Aurelio Voltaire. I have almost all Abney Park albums, and I love Max Raabe und der Palaz Orchester. Big Bad Voodoo Daddy is good to listen to while doing chores, it makes them more bearable. The Cog is Dead (that's the band name) is full of fun steampunk fantasies. La Compagnie Créole for simple fun songs. Jean-Jacques Goldman for more thought-out songs. And his collaboration with Carole Fredericks and Michael Jones, under the name Fredericks, Goldman Jones, have some great gems. But I also have some Evanescence, I and do need to stock up on Muse... (Oh, and I love Yoko Kanno's pieces, too. Being a fan of Ghost in the Shell: Stand Alone Complex, I *had* to buy the OST.)

Reply to Not-so-well-known Christmas music by CLAZID
Abney Park has a Christmas album. Almost all transposed in minor, with a few originals. Makes for a very different Christmas vibe.

I am not from Spain, but I like Mecano; Hijo de la Luna, for example. https://www.youtube.com/watch?v=OwGG5fX7bxY
Not from Italy either, but I have a few albums from Laura Pausini; one of them are cover songs of other famous Italian singers, and one I find fun is Ivano Fossati - La mia banda suona il rock: https://www.youtube.com/watch?v=y9XLiQmFoB0 , also Richard Cocciante - Io Canto https://www.youtube.com/watch?v=dLliBht8KHM Actual Italians may come up with more "modern" suggestions.
But I am Quebecer, and although I could come up with dozens of suggestions, the first one that came to my mind is Luc de la Rochellière - Sauvez mon âme : https://www.youtube.com/watch?v=i4VE10bR_MU
