This is awesome! Someone at my work is actually trying to build something similar but for chemistry publications. I would love to see how you implemented this if you ever want to share your code.

You don't want an M1 yet. I have one and it has been a pain. Not everything is supported on that architecture yet.
If you are doing anything large, you will be running on the cloud anyways.
Also, make sure you get an Nvidia GPU over AMD, since Cuda doesn't run on AMD.
