Nice, I made one of these for Christmas dinner, seared it and popped it in the oven at 200c for five minutes on the middle rack.
That garlic though... chef's kiss
I used seven smashed small cloves for two 10oz T-bones, I served with three with each steak after cooking them a bit more in the pan sauce, I had to negotiate splitting it with my darling mum haha. Bite of steak with a roasted garlic clove, and a bite of steak dipped in a red wine pan sauce finished with a pad of butter...
.... I may go to the butcher on Tuesday when he's open again, I feel like steak for some reason.
Edit: I may have cheated a bit though, I remembered the container of Montreal steak spice I had in the cupboard. A proper deli blend of that stuff is worth its weight in gold, it also makes unbelievable pastrami and smoked meat.
