You can turn this off, go into Settings then Emergency SOS. You can toggle off call with hold and release and call with 5 button presses.

There is no difference with reception if you use a physical SIM or eSIM. Which version of iOS are you on? Make sure you are updated to 16.1. If you continue to have issues, try a factory reset. If that doesn’t help contact Apple as it could be a hardware issue.
