Definitely varies by genre, but I'd say generally the Steam controller

I went through a slump and dialed it down by stepping away from long story-driven games to more roguelites and arcade games.

The key here is that I selected games that were more casual and easier to pick up/set down.

Path of Exile. I tried several years, and many updates ago. I just couldn't get into it.

Tried it again and am quite a fan now.

You might want to check out GRIP: Combat Racing. It isn't Mario Kart but might scratch that itch since you don't have your mind set on a specific Mario Kart title. It's on XBox One.
