AppleCare is the regular warranty, AppleCare+ is the extra one. It's possible they broke something, it's also possible they couldn't tell whether they broke it or if it was broke when it came in, in that case they will simply replace the whole thing because it's not worth arguing with the customer.

Life is not the movies, you're being paranoid. Someone activated it already so that you don't need to do it in a language you may not be familiar with in a foreign country, they did you a favour and likely charged you a fair amount for it.

Why panic? But the first question is did you already try a hard reboot?

How are you doing it? Press Vol up, release then volume down and hold power? Remember the screen will be completely blank

If it truly won’t go into DFU mode you’ll need to take it to Apple, they should do a restore for you even if out of warranty

I always used to call it that because you'd end up in it when your jailbreak went wrong way back in the days of the 3GS... but yes it's essentially a BIOS, nothing shows on the screen and it only allows you to restore from iTunes
