I'm guessing you've only had cremini (button) or portabellas? Those are bottom of the barrel mushrooms. Fry up some oysters with butter, garlic, onion and thyme and it will change your opinion. Super savory and meaty

Sauce is the best part. Where all the flavor is. Tomatoes, onion, garlic, roasted bell peppers, thyme, basil, bay leaf. Not traditional but I also added a bit of concentrated chicken stock to boost the flavor
