(Pâté, said "patay", is like... the fancy liver spread. Or you can have a veg-based pâté but it's def savory)

I tried making a pâte de fruits one Christmas but the vagaries of pectin defeated me (it didn't gel up right).

Relatedly, does anybody have (or managed to replicate) Penny Cluse's recipe for the Bucket o' Spuds? It was my favorite breakfast potato and I miss it so.
