Once you learn to use an ortholinear keyboard the standard row staggered boards feel so weird, there's no reason for that stagger. Column stagger feels even better than ortholinear. This video explains ortholiner keyboards real well.

The numbers are wherever you want them to be, I have mino on the Q row, some people prefer a number pad orientation, whatever suits you workflow. I find it a lot easier to push down a key with my thumb and do the number clores to the home row that using a dedicated number row.

That's a split column staggered keyboard, OP's particular keyboard is the ferris Sweep. But there lot's of other split column staggered keyboards.

This is my keymap on a keyboard with a form factor kinda similar to OP's. And this is my keymap on a smaller 30% keyboard.
The 30% Gherkin was my daily driver for several months, I just moved to a split keyboard 3 days ago, that keymap is just a visual aid to help write the QMK code, I use things like autoshift, capsword and combos on the smaller keyboard that are not represented on the images, but it should give a rough idea on how it's setup. I'm not a programmer, I'm a designer for my use case I need to use the modifiers a lot along with symbols and numbers for Adobe Suite shortcuts that's why I make sure to have the mods on every layer.

If you don't hit space with both thumbs you can map one of the keys for something else, I really like having space and backspace on my thumbs.

Hitting the F keys on a layer is not hard at all, becomes second nature real quick, I daily drive keyboards smaller than OP's and I have a layer with F1 - F12 arranged in a 3x4 grid kinda like a number pad and I really like it.

The BM40 is a good way to go if you're ok with the 2u spacebar layout. It's a great keyboard that can be built for not a lot of money and can be used with QMK or VIA. There's a few options for aluminum cases from KP Republic and you can print something if you want to go that route.
